Neighborly Dinner

I have a college friend who bought a house 3 blocks from us last summer. Who would have guessed a guy I went to college with in Minnesota would end up so close to us?

I’m so glad that he and his wife moved in because we love having “neighbor friends.” This summer we have gotten into the lose habit of having Sunday dinner at each other’s house, rotating every other week.

After a several week hiatus, it was our turn to host dinner and I was super excited to set our outdoor table for the occasion. I used plates and napkins from our wedding. The brightly colored steak knives, juice glasses and table cloth were wedding gifts and the sunflowers came from our front yard.

I spent Saturday night cutting and chopping lots of ingredients for the dinner I had planned. Later, I emphasized that there was more cutting than actual cooking for this meal which was full of pineapple, peppers, mangos, avocados and garden tomatoes.

Grilled Cumin-Lime Pork Loin with Pineapple salsa from Good Life Eats
Pineapple Salsa:
2 1/2 cups fresh pineapple, chopped
1 red bell pepper, chopped
1/2 – 1 Anaheim pepper, seeds removed and diced (adjust for your heat preference)
2 green onion, thinly sliced
1/4 cup packed fresh cilantro, chopped

Mango Avocado Salad with Black Beans from Fresh 365
The only change I made was heating up the beans and then adding all of the other ingredients.

Homemade Pico de Gallo, mix all ingredients to taste
Garden tomatoes
Onion
Hot banana peppers
Cilantro
Garlic
Salt & Pepper

Pitcher Margaritas, pour all ingredients into pitcher and mix well
6 oz. Limeade
6 oz. Tequilla
3 oz. Tiple Sec
1 liter of Soda Water
a few sprigs of mint, muddled

Every week, I’m so thankful that we have such great friends that are neighbors.
