Dance Party Chocolate Chip Cookies

I was in the mood to bake chocolate chips cookies tonight. I looked through my bookmarked recipes and decided to try a chocolate chip coconut oatmeal recipe.

I turned on some music, started adding ingredients into the mixer and had myself a little dance party in the kitchen and did a couple of twirls. I was inspired by the photography e-course that I just stared this week and took some twirly photos.

1 c. vegetable oil
1/2 c. white sugar
1/2 c. brown sugar
-mix the above until well incorporated

-add and mix well-
2 egg whites (can use 2 whole eggs also)
1 tsp. vanilla
-add dry ingredients and stir until combined
1 3/4 c. whole wheat
2 baking powder
3/4 tsp. salt

-add chunky ingredients and stir until just mixed in-
1 1/2 c. oatmeal
1/2  c. mini chocolate chips
1/2 c. coconut ( Because Bear doesn’t like coconut, I mixed 1/4 c. coconut into the second half of the batter.

Form into disc shaped cookies (they won’t melt down) and bake at 400 degrees 8 minutes minutes. Cool on wire rack
